WINEMAKING
Maceration on the skins in stainless steel barrels. At the end of fermentation, two masses are divided:
- one of 375 liters is placed in an opus signinum amphora where it will remain for 15 months
- one of 500 liters is placed in a third passage used tonneau where it will remain for 15 months.
These two masses will never meet until the time of bottling. Subsequently the bottles will rest for another 18 months in a tuff cave.
CHARACTERISTICS
Intense wine with a ruby color with purple reflections. The nose reveals fruity aromas of blackberry, sour cherry and dried fruit. In the mouth it is intense, warm and dry with marked tannins typical of Sangiovese. Moderate acidity and persistent aftertaste.
COMBINATIONS
Excellent in combination with cured meats, red meats and semi-mature sweet cheeses.
